Look at my favourite place to stay in Paris - the Hotel Résidence Monge on rue Monge - a small hotel with simply decorated, clean rooms and friendly, helpful service.
It is well located for seeing many of the main tourist attractions on foot and there are 2 Metro stops minutes from the hotel. There are also many good restaurants, bars and cafes nearby.

My daughter and I stayed at the Hotel de la Sorbonne and enjoyed it very much. The rooms are small but clean and the breakfast basic but it met our needs. It is right across the street from the Sorbonne and a 5-10 minute walk to Notre Dame. Very reasonably priced for Paris!

We stayed at the Hotel De Notre Dame in June 07. It was small, clean and very affordable. It is right across the river from Notre Dame(one block off the main street) and you can hear the bells of Notre Dame in the morning with your window open. The only negative was no a/c but the weather was still cool in June so we were comfortable. Friendly service and reasonable small breakfast - but we usually hit a crepe stand for a morning jambon et fromage crepe!

I would agree with the Grandes Ecoles and Notre Dame.
Others would be Familia and Henri IV Rive Gauche
